Touchdown Buffalo Chicken Salad


If you're looking for a clean but yummy dish for your Super Bowl party, look no further.


(I made a large batch, so yours may vary depending on how many people you are serving--I made enough for 16 people)

8 boneless, skinless chicken breasts

1 1/2 cup Franks Hot Sauce (divided)

3 celery stalks

3 green onions

1/2 small purple/red onion

3 TBS honey

1 TBS olive oil

1 tsp dried parsley

1 tsp dried thyme

5 TBS garlic powder (I personally like a lot of garlic)

1 tsp onion powder

1/4 c red wine vinegar

himalayan salt/pepper to taste


Mix all spices in a bowl

Place chicken breasts in the slow cooker.

Add olive oil, spice mix, honey, red wine vinegar, and 3/4 c of Franks.


Cook on low for 6-8 hours or high for 4 hours

Shred chicken, let cool

Chop up celery, green onion and red onion and combine with chicken


Add remaining 3/4 cup of Franks (or more or less depending how spicy you like things--you can even add red pepper flakes to crank up the heat)


Chill in refrigerator

Serve over mixed greens, eat it on Ezekiel Bread as a sandwich, or eat it on its own!

**If you want to make this as a warm dip, you can add 3/4 c of plain greek yogurt to make it a little creamier**
