Pumpkin Protein Pancakes

Pumpkin Protein Pancakes

1 15oz can pumpkin purée (not pumpkin pie mix)
2 eggs
1 tsp vanilla extract
1 TBS honey
1 c oat flour
1/2 TBS baking powder
1 scoop protein powder (vanilla or fuel)
1 TBS pumpkin pie spice
1 1/2 c water

Combine wet ingredients in a bowl. Then add dry ingredients.


Mix everything together. Add water and whisk until no lumps remain.

Heat a pan/griddle. Spray with coconut oil. Place medium sized spoonfuls on the hot surface (I like to use a ladle). Cook about 4 mins on first side (these will not bubble on top like normal pancakes). Cook 3 mins on 2nd side. Flip and cook 1 min on each side. Serve with your favorite toppings.
