Peanut Butter Banana Oat Bar

4 ripe bananas
1/3 C coconut oil
2 eggs
3 1/2 Tbsp coconut palm sugar
1 tsp baking soda
1 tsp cinnamon
Pinch of salt
1 tsp vanilla extract
1 C almond meal
2 scoops vanilla protein powder
2 C old fashioned rolled oats
1/3 C natural chunky peanut butter
Handful of chopped walnuts and cranberries

Preheat oven to 350 and grease up glass baking dish with coconut oil.

Peel bananas, place them in a large bowl and mash. Add in coconut sugar, salt, vanilla, eggs and oil and mix well until combined. Add cinnamon, almond meal, baking soda, oats, walnuts, cranberries and peanut butter and continue to mix until well combined. Mixture should be lumpy.

Spread the mixture onto your dish evenly and baking for 25 minutes.

Allow for bars to cool completely before slicing. Once sliced, store in refrigerator or freeze for future use.
