Cuban Picadillo

1 lb ground grass fed organic beef/turkey
2 TBS coconut oil divided
3 cloves garlic, minced
1/2 yellow onion, chopped
1 red bell pepper, diced
1 zucchini, diced
1 can of tomato sauce
4 oz chicken broth
Chili powder
Onion powder
Cumin
Oregano
Dried cilantro
Garlic powder
3 bay leaves

Brown your meat in 1 TBS of coconut oil with the minced garlic.
In a separate pan, sauté onions, red bell pepper, and zucchini in 1 TBS of coconut oil add some salt and pepper for seasoning.
Once veggies are sautéed, stir in tomato sauce and chicken broth. Add spices and let simmer for 5 mins. Combine meat with sauce mixture. Cover and simmer for 25-30 mins, stirring occasionally.
You can either eat just the Picadillo by itself, or serve over quinoa/rice.
Garnish with avocado and cilantro.
