No Bake Brownies


1 c quinoa (cooked and semi-cooled)

2 1/2 c dried rolled oats

1/4 c flax seed

1 package of dark chocolate chunks

1 c almond milk

1 c peanut butter

1/4 c honey

1 tsp vanilla


Cook and semi-cool quinoa. In a large bowl, combine quinoa, oats, flax, and chocolate chunks. In a sauce pan, combine remaining ingredients and cook on low until everything is melted together, but do not let it boil. Stir frequently. Add the liquid mixture to the dry ingredients and mix everything together. Spray a baking dish with coconut oil and lay the entire mixture in the dish (choose a dish based off of how thick you would like your brownies). Refrigerate for 2-3 hours and ENJOY! These freeze really nicely and can last several months in the freezer.
