Clean Mexican Pizza

Mexican Pizza

Ingredients:

For crust:

1 head cauliflower, blended into tiny grains

1 can sweet white corn, blended (but still a little chunky)

3 eggs

2 c almond flour

3 eggs

1 tsp garlic powder

1 tsp onion powder

1 TBS minced garlic (only if you like really garlic-y things)

1/2 tsp dried oregano

1/2 tsp dried cilantro

1/2 tsp himalayan salt

1 tsp olive/avocado oil

dash of pepper

Preheat oven to 450. Combine all ingredients in a large bowl. Mix with hands. On a baking sheet lined with parchment paper (spray with cooking oil) create small pizza crusts. Bake crusts for 15 mins.

While the crusts are baking, prepare the black bean spread.

For black bean spread:

1 can black beans

1 small can of fire roasted green chiles

heat on the stove and then puree.

Chop veggies of choice.

zucchini, red bell pepper, green onion

When crust is done baking, top with black bean spread, cooked meat of choice, and veggies. Bake an additional 10 mins.

Garnish with your favorite toppings!

avocado, salsa, cilantro, black olives, plain greek yogurt or jalapeño cream sauce.

jalapeño cream sauce:

4 tbs plain green yogurt

1 jalapeno (chopped in a food processor)

to taste:

garlic powder

onion powder

himalayan salt

pepper
