Clean Cranberry Orange Muffins

2 1/2 C almond flour
1/4 tsp salt
3/4 tsp baking soda
2 eggs
1/2 C honey
3 tablespoons coconut oil
1 1/2 C finely chopped frozen or fresh cranberries
2 small oranges (or clementines)
1/2 C walnuts chopped (optional)

Preheat oven to 325.

Remove 1 rind from Orange, leave rind on other, process both in a blender until mushy, add to mixing bowl.

Add remaining wet ingredients, then dry.

Mix well and place batter into lightly oiled cupcake liners in a muffin tin.

Bake for 35 min until toothpick comes out clear

**You can also bake in a loaf pan or in a casserole dish**
