Chili Lime Grilled Chicken with Mango Salsa

Chili Lime Grilled Chicken (4 servings)
2 limes, juiced
1 Tbsp chili powder
2 cloves of garlic, minced
1 tsp oregano
Pinch of salt and ground pepper
1/4 cup olive oil
4 boneless, skinless chicken breasts
Whisk lime juice, chili powder, garlic, oregano, salt, pepper, and olive oil together. Pour over chicken breasts and place in the refrigerator to marinate. Allow chicken to marinate for at least 1 hour. When ready to cook, remove from refrigerator and cook the chicken breasts to your personal preference (grill, sear, bake, etc.)
-Serving size is 1 chicken breast. Save remaining in refrigerator for future use.

Mango Salsa (3 servings)
2 mangos, peeled and diced
1/2 red onion, finely diced
1/2 cucumber, diced
1 jalapeño, seeded and finely diced
*For spicier results, leave seeds in
1 lime, juiced
1/4 cup cilantro, finely chopped
1 avocado, pitted and diced
pinch of sea salt/himalayan salt
Mix all salsa ingredients in a bowl except the avocado. Set in refrigerator to cool for at least 15 minutes before serving. When ready, top with avocado and enjoy. -Serving size is 3 Tbsp of salsa. Save remaining in an airtight container in refrigerator for future use.
