Chicken Strips with Honey Mustard Poppy Seed Dressing


Chicken Strips Ingredients:

  • 3-4 large chicken breasts cut into strips (or nuggets if they are for your kids)

  • 1 cup almond meal

  • 1/2 cup ground golden flaxseed

  • 2 eggs

  • 3 TBS garlic powder (less if you're not a big garlic fan)

  • 1 TBS onion powder

  • 1 TBS paprika

  • 1 TBS cayenne (if you like spicy flavored things)

  • 2 tsp cumin

  • 1 TBS dried parsley

  • 1 1/2 tsp himalayan salt

  • 1 tsp pepper

  • parchment paper



Preheat oven to 355 degrees. Combine all dry ingredients in a mixing bowl. Feel free to add any other spices/seasonings that you'd like as long as there's no sugar added. In a separate bowl whisk the two eggs and a little himalayan salt and pepper. Dip chicken strips into egg mixture and make sure all sides have egg on them. Then dip into the dry mixture and cover the entire strip with the mixture. Place onto a parchment paper lined baking sheet. Bake for 12-15 mins on one side. Then flip and bake for an additional 12-15 mins. Look for a golden brown color. Broil on High for 2-3 mins to give the strips a little crunch.

Honey Mustard Poppy Seed Dressing:

1/2 c organic mustard
3 TBS honey
1 TBS garlic powder
1 TBS poppy seeds
a dash of pepper
Combine all ingredients and stir.
