Balsamic Chicken with Strawberry Salsa

If you've ever had our Boot Camp Balsamic Dressing, then you KNOW this recipe is going to be great...because you use that as the marinade for the chicken.

Ingredients:

For chicken:

4 Chicken breasts

1/4 c balsamic vinegar

1/2 c olive oil

1 TBS dijon mustard

1/2 tsp garlic powder

himalayan salt and pepper

For strawberry salsa:

2 cups of strawberries, rinsed and diced

1 jalapeno, finely chopped

1/4 c chopped parsley OR basil

purple onion, chopped (amount depends on how onion-y you like your salsa)

juice from 1/4 a lemon

1 TBS honey

Directions:

For chicken:

Combine all ingredients in a large ziploc bag and let the chicken marinate for a few hours (the longer the better).

Grill on high heat for 6-8 mins depending on the thickness of the chicken breasts.

For Strawberry Salsa:

Combine all ingredients and mix in a bowl. Let chill.

Serve the salsa over the grilled chicken breast and enjoy!
