Asian Chicken Salad with Creamy Ginger Dressing


Salad Ingredients:
Shredded chicken (rotisserie for fast prep)
Mixed greens
1/2 c Cole/Broccoli Slaw
1/2 c Shredded carrots
1 diced red bell pepper
3 cuties, peeled and sliced
2 green onions, chopped
1/2 c chopped cilantro
1/2 avocado, sliced
1/2 c slivered/sliced almonds
1/4 tsp red pepper flakes
1/4 tsp sesame seeds
Salt and pepper to taste

Dressing ingredients:
1/4 c Paleo Mayo
1/4 c avocado oil
1/4 c apple cider vinegar
2 tsp sesame oil
1 tsp ground ginger
1 TBS honey
A sprinkle of red pepper flakes
2 garlic cloves, crushed

Combine all salad ingredients in bowl. Make paleo Mayo and combine with all dressing ingredients. Let dressing chill for at least 15 mins. Drizzle dressing over salad, toss and enjoy!
